Chef/Owner Ed Metcalfe of Sonoma's Shiso Modern Asian and Sushi is pleased to introduce his eclectic new summer menus. Updates to the sophisticated menu are sure to delight diners.  The new inspired summer menu includes a Panko and Macadamia Nut Crusted Soft Shell Crab accompanied with green papaya, mango and Shiso salad that is sure to thrill Wine Country palettes.  A deftly prepared summer Surf & Turf- grilled Hokkaido scallops with avocado mousse and grilled Kobe beef flat iron steak, served with fresh grated horseradish, crème fraiche and chives is receiving rave reviews.  Both table seating and "sushi bar" seating are available at both lunch and dinner- sought after "bar-seating" guarantees an authentic, interactive experience.  And to further entice, Ed unveils for the summer season a new peaceful Zen-inspired patio.  Al fresco dining - sushi style!

What has not changed is the wildly popular omakase (Essentially chef's choice- omikase is several courses brought to the table (or sushi bar) over time.) Ed aims to impress both sushi-philes and novices alike with his uniquely signature omakase presentations and seasonal selections.  

A well respected Wine Country culinary leader, Ed captured Best New Restaurant accolades from readers of both Sonoma and Napa magazines.  "Our vision is to be socially responsible to our customers, community, and our environment. We make our very best efforts to support local farmers for our product.  This means trying our best to use only chemical free produce, meat, fish and dairy."

"Along with selecting organic products, we are also doing our part for the environment.  We use bio-degradable products wherever possible.  We also recycle as many products as possible, like our grease for bio-diesel.  The Japanese have set extremely good examples of being environmentally conscious and taking pride in what they do.  We like to think we can do the same."

Shiso is a type of Japanese mint that was brought over by Japanese immigrants in the early 1800's. It offers a clean, refreshing and aromatic quality to its diverse applications in food. Like the Shiso leaf, our goal is to express ourselves with clean, healthy, creative, and unique dishes in a positive atmosphere.
